Don’t Judge Me by My Counter Space and My Favorite Dip to Date

My husband and I live in a very small apartment. I’m not exaggerating. We have a one-butt kitchen – as some in my family like to call it – and no counter space.

The drying rack and coffee maker occupies what little space we do have, which means we had to purchase a butcher’s block. There’s lots of improvising in the Saucy Dipper kitchen as you can see in this photo where the ingredients of today’s featured dip sit ready and waiting for me to chop.

Ignore the toaster. That has nothing to do with the dip. Like I said, we improvise.

Of all the dips I’ve featured on Saucy Dipper so far, this Green Chili Dip is my fave. The spice of the jalapenos and the tang of the lime create a very unique kind of party for my mouth. Of course, when dipped with Tostitos the flavors really come alive.

Green Chili Dip Recipe from Group Recipes

* 2- 3 large green jalapenos
* 2 scallions (green and white parts)
* 1 1/2 tablespoons minced basil or cilantro leaves
* 1/3 teaspoon salt
* 1 teaspoon ground coriander
* 1/3 teaspoon cumin or caraway seeds lightly crushed

* 1 to 1 1/2  teaspoon freshly ground black pepper
* 1 cup soft cream cheese
* 1/4 cup sour cream
* 1 to 1 1/2 tablespoons freshly squeezed lime juice

Instructions: Finely mince the chilies and scallions and place in a bowl. Add the remaining ingredients, except the lime juice and beat until smooth and creamy. Add lime juice to taste. Makes one 3/4 to 2 cups or 4-6 servings.

Few extra tips:

1. Like a lot of dips, Green Chili Dip is definitely better the second day. Plan accordingly if you will be entertaining guests.

2. After chopping the jalapenos you should beware not to touch your mouth or eyes. Feels like burning! My fingertips tingled for a full day after handling them. In the future, I will wear gloves.

3. I could have used a bit more kick. On the next go round, I’ll use less lime juice and four jalapenos instead of two. For reference, I’m a medium-hot salsa lover.
