A Last Supper Before Dieting: Bacon Tomato Sauce

If you are going on a diet in a couple of days and are looking for one last way to indulge, I’ve got the dish for you. It comes in the way of sauce, a bacon and tomato sauce.

Everything tastes better with sauce…and bacon. Right?

This little gem came to me in November while I was spending a crazy amount of time on the couch waiting for baby. Giada De Laurentiis on the Food Network made it. And it is GOOD. We’re talking restaurant quality here.

Sorry, I couldn’t find the original recipe on the Food Network site. This is a modified version.

Bacon and Tomato Sauce Over Penne Pasta with Portabello and Shrimp

Maybe one key ingredient for pasta sauce is fat. In this pasta sauce recipe I use both bacon and half and half.
Ingredients
  • 1 package of bacon, chopped
  • 1 can diced tomatoes
  • 4 cloves garlic, minced
  • 1 tbsp. dried basil
  • ⅓ c. half and half
  • 2 Portobello mushrooms
  • 1 heaping handful cooked shrimp, deveined and quartered
  • grated Parmesan
Instructions
  1. Fry bacon
  2. Remove bacon from pan, but keep bacon grease in pan
  3. Once cooled a little, add tomatoes to pan (keep can handy)
  4. Add garlic and basil
  5. Pour the half and half into the empty tomato can, add a few spoonfuls of the warm tomato mixture to temper the dairy
  6. Add dairy mixture to pan
  7. Throw in mushrooms and shrimp
  8. Return the bacon to pan
  9. Stir and let simmer for a couple minutes until warm throughout
  10. Top with cheese
  11. Eat

  1. I made a bacon and tomato pasta one day out of desperation…I want a BLT but had no bread, so pasta it was. Not as decadent as this but sure makes me wish I had some!
