Uncle Phil’s Saucy Bacon Appetizer

Nope, not my Uncle Phil. This one belongs to my good friend and fellow Dipstock attendee, Katie.

Phil and Katie reign from the foodie nation of Wisconsin…turns out those folks know good cheese, good brats, and good saucy bacon appetizers.

Katie made Uncle Phil’s bacon wrapped water chestnut recipe for last week’s event. It was a huge hit for more reasons than one–the most important being that it includes bacon.

I dove right into this saucy bacon yumminess. By the looks of things I expected a scallop, but was pleasantly surprised by the crunch of that water chestnut – a food I don’t normally eat. Once we finished off the bacon wrapped water chestnuts we dipped bread in the remaining sauce, which turned out to be another great combo.

Uncle Phil’s Saucy Bacon Appetizer Recipe

2 cans water chestnuts

1 package bacon

2 c. Miracle Whip

1 c. brown sugar

1/2 of 10 oz. orange duck sauce

1/2 jar of 10 oz. sweet and sour sauce

1/2 jar of 10 oz. sweet chili sauce

1 tbsp. BBQ sauce

Directions: Cook bacon, but don’t let it get anywhere near crispy. Let cool. Combine all ingredients and whisk together until smooth. Add more brown sugar or duck sauce to taste.  Pour 1/4 of sauce in a baking dish of your choice. Wrap each water chestnut with a slice of bacon and place in dish. Pour the remaining sauce over the chestnuts and heat in the oven at 350 degrees for 10 minutes.

Serve with napkins, toothpicks, and Miller Light.

You may have noticed that the measurements here are a little vague. I think Katie has been eyeballing this one for awhile now :). She uses turkey bacon instead of pork and she says that in lieu of orange duck sauce you can use orange apricot sauce or more of the other two sauces listed in the recipe.
