Bacon and Tomato Sauce Over Penne Pasta with Portabello and Shrimp

Serves: 4
- 1 package of bacon, chopped
- 1 can diced tomatoes
- 4 cloves garlic, minced
- 1 tbsp. dried basil
- ⅓ c. half and half
- 2 Portobello mushrooms
- 1 heaping handful cooked shrimp, deveined and quartered
- grated Parmesan
- Fry bacon
- Remove bacon from pan, but keep bacon grease in pan
- Once cooled a little, add tomatoes to pan (keep can handy)
- Add garlic and basil
- Pour the half and half into the empty tomato can, add a few spoonfuls of the warm tomato mixture to temper the dairy
- Add dairy mixture to pan
- Throw in mushrooms and shrimp
- Return the bacon to pan
- Stir and let simmer for a couple minutes until warm throughout
- Top with cheese
- Eat
