Today, we have a special (and sweet) treat from Jennifer over at My Morning Chocolate. After visiting her blog for the first time I quickly fell for her writing style and sweet tooth musings. I have a feeling you’ll do the same.<\/em><\/p>\n

When Jennifer and I agreed to trade posts I thought it was only logical to ask her to write about chocolate. I mean, it is in the name of her blog, and I friggin’ love chocolate. I just don’t eat enough of it.<\/p>\n

But anyway. Enough about me. Let’s talk about chocolate.<\/p>\n

Do you remember your first chocolate sauce?<\/em><\/p>\n

My answer:\u00a0 the creamy chocolate on top of McDonald\u2019s vanilla ice cream.\u00a0 This was my first and favorite childhood treat.<\/p>\n

Now here\u2019s a harder one:\u00a0 what was your first type <\/em>of chocolate sauce?<\/p>\n

Because I can look at the McDonald\u2019s menu, I know that they serve hot fudge sauce.\u00a0 But this is different from chocolate sauce, and from chocolate syrup for that matter.\u00a0 It seems that categorizing your chocolate sauce may be harder than actually making <\/em>it.<\/p>\n

So let\u2019s start with the hard part \u2013 the definitions.<\/p>\n

The Joy of Cooking <\/em>says chocolate sauce is like ganache, which is simply chocolate and cream cooked together.\u00a0 \u201cIf the word \u2018ganache\u2019 intimidates you, you are not alone,\u201d writes Mark Bittman<\/a> in his column, \u201cThe Minimalist.\u201d\u00a0 \u201cMaybe if the stuff were called \u2018basic, simple, and entirely superior chocolate sauce,\u2019 more people would make it.\u201d\u00a0 Others seem to agree with the \u201csuperior\u201d adjective \u2013 in my research, this was by far the preferred chocolate sauce.<\/p>\n

Hot fudge sauce, on the other hand, is sugar syrup with chocolate added to it, as well as butter, corn syrup, and sometimes cream.\u00a0 Food writer Nancy Baggett describes it as \u201ca fudge that never sets<\/a>.\u201d\u00a0 The first hot fudge sundae<\/a> does not, in fact, date back to Mickey D\u2019s.\u00a0 Instead, it was served at CC Browns restaurant in 1906 Los Angeles.<\/p>\n

Then, there\u2019s chocolate syrup, which holds the distinction of being the only chocolate sauce mentioned in my food Bible, The Food Lover\u2019s Companion<\/em>.\u00a0 Many of us grew up on Hershey\u2019s syrup<\/a>, the sweet, thin sauce that was manufactured for home use in 1928.\u00a0 Alton Brown\u2019s version<\/a> is made with cocoa powder, sugar, corn syrup, and water.<\/p>\n

Now that the definitions are covered, I\u2019m going to add to the confusion:\u00a0 I didn\u2019t make any of these sauces.\u00a0 I made chocolate topping.<\/p>\n

Chocolate Topping <\/strong>(from Baltimore <\/em>magazine<\/a>)<\/p>\n

Created by Aja Cage of Baltimore\u2019s Salt Tavern, this chocolate topping is a mixture of butter, cocoa powder, sugar, and coffee.\u00a0 Cage actually stirs the mixture into a vanilla ice cream base to make a delicious chocolate ice cream, then uses the leftovers as a sauce.<\/p>\n

What I love about this sauce is that it offers endless opportunities for variations.\u00a0 I\u2019ve included a few of my experimental \u2013 and quite tasty, I think \u2013 versions after the recipe.<\/p>\n

2 tablespoons unsalted butter<\/p>\n

\u00bd cup coffee<\/p>\n

\u00bd cup brown sugar<\/p>\n

\u00bd cup unsweetened cocoa<\/p>\n

1\/8 teaspoon salt<\/p>\n

\u00bd teaspoon vanilla extract<\/p>\n

Combine ingredients in a double boiler and stir over heat until smooth \u2013 and sugar dissolves and ingredients are incorporated.<\/p>\n

Note:\u00a0 When this sauce is hot, it has a thin consistency.\u00a0 Then, if you decide to refrigerate it, it thickens to the consistency of hot fudge sauce. <\/em><\/p>\n

Variations<\/strong><\/p>\n

Mexican Chocolate and Cherry Topping<\/strong>:\u00a0 Recently, I tried a delicious Chocolove Chilies & Cherries in Dark Chocolate bar<\/a>.\u00a0 So I tried to recreate the flavors in this chocolate topping.\u00a0 I added 2 teaspoons cinnamon and \u00bd teaspoon cayenne powder to make Cage\u2019s Mexican chocolate sauce, then stirred in a handful of dried cherries.\u00a0 To reduce the chewy texture of the cherries, try soaking them in water first to rehydrate them.<\/p>\n

Mounds Chocolate Topping<\/strong>:\u00a0 I had leftover coconut milk in my fridge, so I added \u00bc cup to my chocolate topping and voila!\u00a0 Chocolate coconut sauce.\u00a0 You could also add a handful of unsweetened coconut for some texture.\u00a0 Or, if you\u2019re eating the sauce over ice cream, top with toasted coconut for more coconut flavor.\u00a0 (Note:\u00a0 the coconut milk thins the sauce.)<\/p>\n

Any Flavor Chocolate Topping<\/strong>:\u00a0 Want strawberry chocolate sauce?\u00a0 How about chocolate sauce with anise?\u00a0 From almond and lemon to blackberry cola and Bavarian cream, there seems to be an extract for almost all imaginable flavors.\u00a0 Take a look at this extract list<\/a> and let your creativity go wild.<\/p>\n
